You're in luck! I was thrilled to happen upon "the best" pumpkin cookie recipe last week while browsing through Present Past Collection blog. I was intrigued with this particular cookie recipe, not only because I love pumpkin anything, but also because of the promise that comes with these cookies. So Cute.
"...Your children will adore you and your husband will remember why you were such a great catch!..." Hmm. And, off I went to the grocery.
I made them this weekend and the verdict is in... the cookies are indeed tasty! Soft and scrumptious! Considering they were my first batch, everybody thinks they're great~ my husband, my neighbors and a few of my co-workers (we have what started as an innocent bake-off at the office but is now quite the competition).
Here's the recipe:
Pumpkin Cookies with Cinnamon Glaze
- 1 c. pumpkin
- 1 c. butter, softened
- 1 c. sugar
- 1 tsp. vanilla
- 1 egg
- 3/4 tsp. salt
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/8 tsp. nutmeg
- 2 1/4 c. flour
Preheat oven to 350° Mix wet ingredients together until well-blended. In a separate bowl, combine the salt, baking powder, baking soda, sugar, cinnamon, nutmeg and flour and then add to the wet ingredients. With a small ice cream scoop (I used my smaller pampered chef cookie scoop), drop onto cookie sheet and bake for 13-14 minutes. (They needed to bake longer in my oven).
Cinnamon Glaze
About 1/2 c. powdered sugar, 1 Tbs. softened butter and milk. Mix until you feel there is a nice, smooth consistency. After it is thoroughly combined, stir in a pinch or two of cinnamon. Drizzle glaze over cooled cookies and enjoy!
